The flavor of the seed is bland and the shells are soft and pliable due to higher moisture. This makes them harder to crack open. Competitors process them this way because it's cheaper.
Roasting is time-consuming and must be done carefully and uniformly. But cutting corners means cutting the flavors you deserve.
